SMOKED SALMON RECIPES
WITH A DRINK OR AS A STARTER...
Mix 200g creme fraiche with 2 tbsp creamed (or fresh) horseradish and the juice of half a lemon. Spoon the mixture onto bought (or home made) cocktail blinis and top each with a small piece of smoked salmon. Garnish with some dill or (flat leaved) parsley.
Beat together 200g cream cheese with the juice of half a lemon, season to taste and spread 5 flour tortillas with a thin layer of the mixture. Top each tortilla with a thin layer of fresh rocket leaves and thin (ideally long) slices of smoked salmon. Roll up, slice on the diagonal and serve diagonal-cut side up.
Finely chop the flesh of 1 large ripe avocado tip into a bowl, then squeeze over juice of half a lemon. Add 100g quartered cherry tomatoes, 1 finely chopped shallot, 1 tbsp extra virgin olive oil, 1 red chilli (deseeded and finely chopped), 2 tbsp tomato chutney and a handful chopped coriander. Mix and season. Toast 5 slices of rye bread and cut each into 6 bite sized squares. Cut 4 (long) slices smoked salmon into strips and fold a piece onto each square. Top with relish.

Thinly slice 900g peeled potatoes. Heat 225ml milk together with a pot (284ml) of double cream until just about to boil, then remove from the heat and season generously. Layer half the potatoes in a deep buttered dish, arrange 5 smoked salmon slices on top and cover with the remaining potatoes. Pour over the cream mixture. Bake for about 1 hour (until the potatoes are tender and golden) in the 180 C pre-heated oven.
